If you’re a fan of bell peppers, you’re lucky to have so many different kinds to choose from. You may have your favorite color of bell pepper, but hands down; red is the healthiest. They stay on the vine longer than the other colors, so it has time to develop more nutrients.

Red peppers have nearly 11 times more beta carotene than green ones and one and a half the amount of vitamin C! Thanks to the capsaicin chemical compound, they are also fantastic for anti-inflammatory purposes. One-half cup of red bell pepper gives you 47% of your daily intake of vitamin A. That’s crazy!
