You’re Going to LOVE These Spring Cookie Recipes (We Promise!)

Correct us if we’re wrong, but fall cookies are all about warm flavors like caramel and pumpkin, and then winter cookies are reserved for flavors like peppermint and hot cocoa, but when it comes to springtime cookies we’re thinkin’ florals and light citrus flavors. We can’t be alone in this, right? Now, don’t get us wrong, we’ve never met a cookie we didn’t like, but we do tend to gravitate toward certain flowers depending on the season. If you can relate, then you’ll appreciate our little round-up of a few of our most favorite spring cookie recipes! 

Glazed Raspberry Lemon Cookies

Just right off the bat, these cookies combine three of our favorite things: glaze, raspberries, and lemon. In all seriousness though, these are the ultimate spring cookies! You get a little sweetness from the raspberry and a little zing from the lemon keeping this cookie light and fruity. These are perfect for serving up at brunch because they’re really more of a cookie-scone hybrid, and they’re pretty to look at! No matter where you serve them, at what time of day, or to who, we’re sure your guests (or family, or self) will leave wanting more.

Glazed Lemon Lavender Cookies

Call us crazy, but a glaze really ties a cookie together, don’t you think? If you’re already leery about the lavender, but love the smell of it, we highly recommend trying a lavender cookie! The base of these cookies is a butter cookie recipe that absolutely melts in your mouth, then the hint of floral from the lavender and tartness from the lemon makes this a scrumptious cookie that really captivates the essence of springtime. Strawberry Shortbread Cookies

First of all, these cookies only require five, yes FIVE, ingredients to make. These cookies are sparkly, pretty in color, and are just the right amount of strawberry sweet. If you’re feeling really springy and pretty in pink, replace the vanilla with rosewater; if you love the taste of rose, you won’t be sorry. But no worries if that just doesn’t sound like your thing, because the vanilla is just as good. You really can’t go wrong with shortbread cookies.

Coconut Sugar Cookies

We love a good sugar cookie, but the addition of coconut? Absolutely genius! These cookies are the ultimate sugar cookies with a soft center and crispy edges. The recipe also calls for a white chocolate drizzle, topped with all kinds of colorful sprinkles and we couldn’t think of a more perfect springtime cookie. And, of course, if white chocolate isn’t your thing, you can always opt for milk or dark chocolate.
