As Nelly once said, it’s getting hot in here. With the temperatures getting higher and higher we have absolutely zero desire to turn our ovens on and roast inside of our own home. But the thing is, we all have to eat. So we put together just a few of our favorite no-cook recipes so we can all survive the summer together.
A Classic BLT Pita
Few things are as good as a bacon, lettuce, and tomato sandwich, especially during tomato season, and there are a few ways you can go with this classic combo, personally, we like to stuff a pita generously and serve it with some chilled pasta salad. Admittedly, we stray from the three main ingredients and get a little crazy with chopped fresh veggies, parmesan cheese, fresh herbs, and chipotle ranch. Grilled Vegetable Quesadillas
If just thinking about standing over a grill makes you break into a sweat, we get it. So if you don’t want to fire up the grill, you can toss the veggies in the air fryer for a few minutes and you can keep that air fryer on or opt for a panini press to really construct your quesadilla. Chicken Salad
The hack to keeping this a no-cook meal? Instead of cooking any kind of chicken, you’ll buy a rotisserie chicken from the grocery store, which not only makes this meal easy, it makes it quick too! You can opt to eat chicken salad with cucumbers, tomatoes, and, of course, bread. And we’ll be honest, sometimes we just grab a spoon and eat it solo.
