Part of reducing waste means making the most out of everything you can before discarding it. That includes your vegetables. Composting is a terrific way to dispose of your unused veggies and scraps, but why not milk them for all they are worth? They are perfect for stock.

Collect your vegetable scraps every time you get some and keep them together in the freezer. Once you have enough, put them on the stove to boil them down into veggie stock. Once you’ve done that, you can toss the remainder into your compost bin. Homemade stock is healthier, less expensive than store-bought, and believe it or not, tastier!
