With Valentine’s Day coming up only a mere month after we promised ourselves we would eat healthier, we’re out here struggling. We know we can’t be alone in this so here are a few of our favorite healthy-ish sweet treats to make for the big day.
Greek Yogurt Chocolate Mousse
You will never find us turning down a hearty helping of velvety smooth chocolate mousse, but to cut down on some of the sinfulness, this recipe calls for Greek yogurt instead of lots of cream, and because this recipe doesn’t require eggs, you’ll also save $500. (Joking, but also serious) Once your mousse is ready, we recommend serving it with a dollop of light Cool Whip and your favorite red berry on top. Check out this recipe from My Fussy Eater.
Ingredients
- 180ml / ¾ cup milk
- 100g / 3 ½ oz dark chocolate
- 500ml / 2 cups greek yogurt
- 1 tbsp honey or maple syrup
- ½ tsp vanilla extract
Instructions
- Pour the milk into a saucepan and add the chocolate, either grated or very finely chopped or shaved. Gently heat the milk until the chocolate melts, being careful not to let it boil. Once the chocolate and milk have fully combined, add the honey and vanilla extract and mix well.
- Spoon the greek yogurt into a large bowl and pour the chocolate mixture on top. Mix together well before transferring to individual bowls, ramekins or glasses.
- Chill in the fridge for 2 hours. Serve with a small spoonful of greek yogurt and some fresh raspberries.
- The chocolate mousse will keep in the fridge for 2 days.
One Minute Chocolate Raspberry Brownie
This brownie is gooey, full of chocolate chunks, and juicy raspberries and it’s ready in just about one minute. Check out this recipe from The Big Mans World.
Ingredients
- 2 tablespoon coconut flour
- 1 tablespoon granulated sweetener of choice
- 1/2 tablespoon cocoa powder
- 1/2 teaspoon baking powder
- 1 tablespoon unsweetened applesauce
- 1 tablespoon smooth almond butter can sub for any nut or seed butter of choice
- 2-3 tablespoon milk of choice*
- 1/2 teaspoon vanilla extract
- 1 large egg white or 1 flax egg for vegan option**
- 1-2 tablespoon frozen raspberries
- 1-2 teaspoon chocolate chips of choice optional
Instructions
- Grease a microwave safe bowl or mug and set aside.
- In a small mixing bowl, combine all your dry ingredients and set aside.
- Add your wet ingredients, minus the raspberries and mix until a thick, smooth batter remains. If it’s too thick, add an extra tablespoon of milk to compensate. Stir through your raspberries and top with the optional chocolate chips.
- Microwave for 50 seconds-2 minutes, depending on your microwave. For an undercooked, gooey brownie, remove around the 50 second mark.
Chocolate Covered Frozen Bananas
You can never go wrong with chocolate-covered fruit, we just happen to love bananas because they can so easily be put on a stick. Make your bananas even more decadent by adding peanut butter, chopped nuts, coconuts, or even diced berries. Check out this recipe from Yummy Mummy Kitchen.
Ingredients
- 4 bananas, peeled and halved crosswise
- 8 oz. favorite chocolate chips
- chopped nuts (optional for topping)
- shaved coconut (optional for topping)
- peanut butter (optional for topping)
- berries, diced (optional for topping)
- seeds (optional for topping)
Instructions
- Insert a popsicle stick or cake pop stick into the cut sides of bananas. Place on cookie sheet lined with parchment or wax paper and freeze for at least 2 hours.
- Melt chocolate in the bowl of a double boiler until smooth. Carefully transfer the melted chocolate into a drinking glass.
- Holding the stick, dip a banana into the melted chocolate to coat. Chocolate doesn’t not need to go all the way to the end of the banana. While chocolate is still melty, sprinkle any toppings on top. If doing a peanut butter drizzle, dip a fork in the peanut butter and drizzle over the chocolate. Lay chocolate covered banana back onto the lined cookie sheet and continue with the other bananas. Enjoy right away or freeze for later.
